· 3 cups heavy cream
· ½ cup Biscoff cookie butter (creamy)
· 1 tsp vanilla extract
For Assembly:
· 1 (11 oz) box vanilla wafers (about 60 cookies)
· 8-10 Biscoff cookies, crushed, for layering
· 4-5 ripe bananas, sliced
· ¾ cup caramel sauce (store-bought or homemade), plus extra for drizzling
· Whipped cream and extra Biscoff cookies for garnish
Instructions
1. Make the Pudding
· In a large bowl, whisk together sweetened condensed milk and ice water until well combined.
· Add the instant pudding mix and whisk for 2 minutes until slightly thickened.
· Place the bowl in the refrigerator for 5 minutes to set.
· In another large bowl, beat the heavy cream until stiff peaks form.
· To the chilled pudding mixture, add the Biscoff cookie butter and vanilla extract, and whisk until smooth.
· Gently fold in the whipped cream until fully incorporated and no streaks remain. Set aside.
2. Assemble the Pudding
· In a 9×13-inch dish or trifle bowl, spread a thin layer of the pudding mixture on the bottom.
· Add a layer of vanilla wafers, followed by a layer of sliced bananas.
· Drizzle about ¼ cup of caramel sauce over the bananas.
· Sprinkle a handful of crushed Biscoff cookies over the caramel.
· Spread a generous layer of pudding (about one-third of the mixture) over the cookies and bananas.
· Repeat the layers two more times, ending with a final layer of pudding.
· Cover tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
3. Serve
· Just before serving, drizzle with additional caramel sauce and garnish with whipped cream and whole or crumbled Biscoff cookies.
· Scoop into bowls and enjoy chilled.
Tips for Success
· Use ripe but firm bananas to avoid mushiness.
· For extra Biscoff flavor, spread cookie butter on the vanilla wafers before layering.
· Make ahead: This pudding tastes even better the next day as the flavors meld.
· Customize with a pinch of sea salt in the caramel for a sweet-salty contrast.
