Mediterranean Lemon Chicken with Artichokes & Olives
Ingredients:
Chicken:
4 chicken breasts or thighs
1 tbsp (15 ml) olive oil
1 tsp (5 g) sea salt
½ tsp (2–3 g) black pepper
1 tsp (5 g) garlic powder
1 tsp (5 g) dried oregano
Mediterranean Mix:
1 cup (150 g) artichoke hearts, drained & halved
½ cup (75 g) Kalamata or green olives, pitted
1 lemon, sliced
½ cup (120 ml) chicken broth
2 tbsp (30 ml) lemon juice
2 cloves garlic, minced
1 tbsp (15 ml) olive oil
Optional: 1 tbsp (10 g) chopped fresh parsley
Directions:
Season chicken:
Preheat oven to 400°F (200°C).
Rub chicken with olive oil, salt, pepper, garlic powder, and oregano.
Sear chicken (optional but adds flavor):
In a skillet, sear chicken 2–3 minutes per side until lightly golden.
Assemble:
Place chicken in a baking dish.
Scatter artichokes and olives around it.
Add lemon slices.
Pour lemon juice, broth, olive oil, and minced garlic over everything.
Bake:
Bake 25–30 minutes, until chicken is cooked through (165°F / 74°C).
Spoon the pan juices over the chicken before serving.
Finish:
Top with parsley and an extra splash of lemon if desired.
Serve:
Perfect with rice, couscous, roasted potatoes, or warm bread.
