Irresistible Garlic & Herb Potatoes
Ingredients:
3 potatoes, peeled and diced
2 glasses of water
1 onion, finely chopped
3 cloves of garlic, minced
A bunch of coriander and parsley, chopped
2 tbsp olive oil or butter
½ tsp salt (or to taste)
½ tsp black pepper
½ tsp paprika (optional)
½ tsp cumin (optional for extra flavor)
Instructions:
Boil the Potatoes

In a pot, bring 2 glasses of water to a boil.
Add the diced potatoes and cook for 10-15 minutes, until they are tender but not mushy.
Drain and set aside.
Sauté the Aromatics

In a large pan, heat olive oil or butter over medium heat.
Add the chopped onion and cook until soft and golden.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Combine Everything

Add the boiled potatoes to the pan and toss well.
Season with salt, pepper, paprika, and cumin.
Stir gently to coat the potatoes in the spices and aromatics.
Finish with Fresh Herbs

Remove from heat and mix in the chopped coriander and parsley.
Serve & Enjoy!
