- Knead: Turn the dough onto a floured surface and knead for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for 1–1.5 hours, or until doubled in size.
- Shape Bombolini: Punch down the dough and roll into a ½-inch thick sheet. Cut circles using a cookie cutter or glass. Place on a parchment-lined tray and cover. Let rise for another 30 minutes.
