Ingredients
Makes about 24–30 bite-size biscuits
For the biscuits:
· 2 cups all-purpose flour
· 1 tablespoon baking powder
· 2 tablespoons granulated sugar
· ½ teaspoon salt
· 6 tablespoons cold unsalted butter, cubed
· ¾ cup cold buttermilk (or milk + ¾ tablespoon vinegar, rested 5 minutes)
· 1 teaspoon vanilla extract (optional)
For the cinnamon sugar coating:
· ½ cup granulated sugar
· 1 ½ teaspoons ground cinnamon
· ¼ teaspoon ground nutmeg (optional)
· 4 tablespoons melted butter (for brushing)
Optional glaze:
· ½ cup powdered sugar
· 1–2 teaspoons milk or cream
· ¼ teaspoon vanilla extract
Instructions
Preheat and prep:
· Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
· In a small bowl, mix together the sugar, cinnamon, and nutmeg for the coating. Set aside.
· Melt butter for brushing; keep warm.
Make the biscuit dough:
· In a large bowl, whisk together flour, baking powder, sugar, and salt.
· Cut in cold butter using a pastry cutter, fork, or your fingers until mixture resembles coarse crumbs.
· Make a well in the center and pour in cold buttermilk and vanilla. Stir gently until just combined—do not overmix.
Shape the biscuits:
· Turn dough out onto a lightly floured surface. Gently pat into a ½-inch thick rectangle (no rolling pin needed).
· Using a small cookie cutter (about 1–1.5 inches) or a knife, cut into small rounds or squares. Re-roll scraps gently once.
· Dip each piece into melted butter, then roll in cinnamon sugar to coat lightly.
· Place on prepared baking sheet about 1 inch apart.
Bake:
· Bake for 9–12 minutes, until golden and puffed.
· Remove from oven and immediately brush with remaining melted butter and sprinkle with extra cinnamon sugar if desired.
Optional glaze:
· Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over warm biscuits.
Tips for Perfect Bite-Size Biscuits
· Keep ingredients cold for flaky layers—especially the butter and buttermilk.
· Don’t overwork the dough—handle as little as possible to keep biscuits tender.
· Use a sharp cutter and don’t twist—press straight down for better rise.
· Serve warm for the best texture and flavor.
Flavor Variations
· Add citrus zest: 1 teaspoon orange or lemon zest in the dough.
· Spiced biscuits: Add ½ teaspoon cinnamon or pumpkin spice to the dry ingredients.
· Stuffed bites: Press a few chocolate chips or a small piece of apple into the center before baking.
· Savory-sweet: Sprinkle with flaky sea salt after baking.
