Ingredients:

3 cups crisp green lettuce leaves, chopped

1 cup cherry tomatoes, halved

1 large cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup black olives

1/3 cup crumbled feta cheese (optional)

2 tablespoons fresh parsley, chopped

1 teaspoon dried oregano

Freshly ground black pepper, to taste

Greek Yogurt Dressing:

1/2 cup plain Greek yogurt

1 tablespoon extra virgin olive oil

1 tablespoon fresh lemon juice

1 small garlic clove, finely minced

Salt, to taste

Directions:

In a large bowl, combine lettuce, cherry tomatoes, cucumber slices, red onion, and black olives.

In a separate bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, and salt until smooth and creamy.

Spoon the yogurt dressing over the salad in generous dollops.

Sprinkle with dried oregano, freshly ground black pepper, and chopped parsley.
