  • 1 can (10 oz) diced tomatoes with green chilis, undrained
  • 1 cup sour cream
  • 1 cup beef broth
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Cook the spaghetti noodles according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened.
  3. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  4. Stir in taco seasoning, diced tomatoes with green chilis, and beef broth. Simmer for 5–7 minutes to let the flavors blend.
  5. Lower the heat and mix in sour cream until well combined.
  6. Add the cooked spaghetti to the skillet and toss to coat in the sauce.
  7. Sprinkle shredded Mexican blend cheese over the top. Cover until the cheese is melted and gooey.
