Taco Spaghetti

Ingredients
- 1 pound spaghetti noodles
- 2 pounds ground beef
- ½ yellow onion, diced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chilis, undrained
- 1 cup sour cream
- 1 cup beef broth
- 2 cups shredded Mexican blend cheese
Instructions
- Cook the spaghetti noodles according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in taco seasoning, diced tomatoes with green chilis, and beef broth. Simmer for 5–7 minutes to let the flavors blend.
- Lower the heat and mix in sour cream until well combined.
- Add the cooked spaghetti to the skillet and toss to coat in the sauce.
- Sprinkle shredded Mexican blend cheese over the top. Cover until the cheese is melted and gooey.
- Serve hot, garnished with extra toppings like jalapeños, cilantro, or avocado if desired.
