Ingredients

  • ½ cup (120g) unsalted butter, softened
  • ½ cup (130g) creamy peanut butter
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups (160g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • Mini Reese’s peanut butter cups (about 24, unwrapped)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
  2. In a mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Stir in chocolate chips.
  6. Scoop about a tablespoon of dough into each mini muffin cup. Bake for 8–10 minutes, or until the edges are lightly golden.
  7. Remove from the oven and immediately press a mini Reese’s peanut butter cup into the center of each cookie bite.
  8. Allow them to cool in the pan for 10 minutes before transferring to a wire rack.
