Reese’s Peanut Butter Chocolate Chip Cookie Bites 😋
If you love peanut butter and chocolate together, these bite-sized cookie cups are the perfect treat. Soft, chewy, and filled with melty chocolate, they’re irresistible and so easy to make.
Ingredients
- ½ cup (120g) unsalted butter, softened
- ½ cup (130g) creamy peanut butter
- ½ cup (100g) brown sugar, packed
- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¼ cups (160g) all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup semi-sweet chocolate chips
- Mini Reese’s peanut butter cups (about 24, unwrapped)
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
- In a mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Stir in chocolate chips.
- Scoop about a tablespoon of dough into each mini muffin cup. Bake for 8–10 minutes, or until the edges are lightly golden.
- Remove from the oven and immediately press a mini Reese’s peanut butter cup into the center of each cookie bite.
- Allow them to cool in the pan for 10 minutes before transferring to a wire rack.
